Many Palestinians have fond memories of their grandmothers making maftoul at home, and our own version – handmade at a women's cooperative near Hebron – embraces the same traditional methods. Dried by the sun, rolled by hand, and steamed in small batches: this is real food, with real baraka (abundance).

Compared to the more familiar North African couscous, maftoul is coarser and nuttier. Because it's made from bulgur and whole wheat, it's also a more nutritious and filling alternative.

Grown and packed in Palestine.
